Philosophy

Today, it is with a pure and sincere desire that Camille Saint-M'leux unveils Geoélia, like a wink to the horizon, to salt water, to the sea wind, to memory... 125 rue de la Tour is a place of high expression, thought out in every detail.

Here, the mineral whispers in the raw concrete, softens in the curves of the stucco, and gracefully intertwines with the gravel that ensures the silence of the cellar, home to over 300 wines. Silky drapes, suspended like childhood memories, envelop the space, bathed in a precisely measured, almost choreographed light.

Each surface engages in a gentle dialogue with another. Every detail pays homage to French craftsmanship—noble, precise, and sincere—in a quest for balance between density and delicacy, upholding the discreet pursuit of excellence. Camille Saint-M'leux evokes the iodine of her childhood, the umami of her travels, and the rigor of the great houses.

He delivers a free, intense, and clear score. A serene journey, carried by the energy of a precise gesture and the elegance of a conductor who has found his path.

Our kitchen

At Geoélia, two tasting menus offer a progressive discovery of the Chef's cuisine: A 5-course menu at €125 and a 7-course menu at €160.

A sensitive cuisine, rooted in the season, where each dish tells a story between land, sea and memory.

For those who prefer to choose at their own pace, a free menu completes the experience, with a carefully curated selection of starters, main courses and desserts, all conceived with the same attention to products and techniques.

Our cellar

Geoélia's wine cellar reflects the same exacting standards as its cuisine: sincerity, precision, and a spirit of adventure. It brings together committed winemakers, exceptional terroirs, rare or renowned names, with a particular focus on wines crafted by independent producers and single-vineyard expressions.

From Burgundy to the Loire, from the Jura to the Canary Islands, including beautiful vertical tastings of Ulysse Collin champagnes, each bottle has been chosen to interact with the dish, prolong the emotion, or simply accompany a moment.
